Couscous: A Dish, Many Travels, Several Flavours (16th-21st Centuries)
Abstract
The Muslims have lived in the territory that is now Portugal from the 8th century onwards. However, couscous has only been documented since the 15th century. It was initially understood, disparagingly, as a food of the Moors. The product and the dish went overseas, namely to the Portuguese Atlantic archipelagos and Brazil. Adaptations to local products occurred, giving rise to combinations and preparations differentiated in time and space, in permanent recreation.
